Creamy Rice Pudding

there are
certain foods in this world
that beg to be eaten
when the thermostat drops
to a continual chill

and one of those
go to eats for me is
rice pudding
















i started making this stove top version
about 10 years ago
when a friend gave me her awesome recipe
and now
i am sharing the love
by passing it on to you

so may i present to you
my fabulous
warm
creamy
delicious

Grandma's Rice Pudding


1/3 cup rice
1 1/2 cups water
1/3 cup sugar
1 tsp. salt
1 1/3 cups milk (2% or whole)
1 tsp. butter
1/2 tsp. vanilla
2 egg yolks, beaten

Bring rice and water to boil, simmer till water is nearly gone. (about 25 minutes.) Add sugar, cornstarch, salt and milk to rice. Bring up to soft boil for a minute. Stir in butter and vanilla. Temper egg yolks with a cup of the rice and then add to pot. Bring to a soft boil stirring constantly. Grate in as much nutmeg as desired. (and raisins--especially if you soak them in boiling water first for 5 minutes) 


For a truly decadent dish, you can add some heavy cream just before serving.  Just don't come calling when that Christmas dress won't zip.
