i wish i could give credit to whoever
gave me this recipe
for oatmeal chocolate chip cookies
because it is my family's absolute favorite cookie
it's easy
it always turns out
and it makes
the oh-so yummiest cookie dough
here's what you'll need
1 c. butter, softened
1 c. brown sugar
1/2 c. white sugar
2 eggs
2 tsp. vanilla
1 1/4 c. flour
1/2 tsp. baking soda
1 tsp. salt
3 c. quick oats or rolled oats
1 c. chips (give or take)
preheat oven to 325 degrees
cream butter and sugars
add eggs and vanilla
combine flour, soda and salt and add to wet mix
add oats and chips
bake 12 minutes and cool for 2 on cookie sheet
now eat one before your kids get to them

ReplyDeleteFair Exchange Alison...here's my friend Adri's version of Oatmeal Cookies, should you ever decide to change it up. I'm going to make both!
ReplyDeleteAdri's Processor Chocolate Chip Oatmeal Cookies
½ cup butter, cut In chunks
½ cup oil
1 cup brown sugar, lightly packed
1 tsp. vanilla
¼ cup boiling water
1 ¾ cup flour
½ tsp. salt
1 tsp. baking soda
2 cups oatmeal
½ cup flaked coconut
2/3 cup chocolate chips
½ cup walnuts or pecans
½ cup dried cranberries
In processor with steel knife blade: Process butter, oil, sugar and vanilla for 2 minutes, scraping down sides of bowl occasionally. Add boiling water and blend for a few seconds. Add flour, salt, soda and oatmeal. Process with several on/off turns, just until mixed. Stir in coconut, chocolate chips, nuts and cranberries with a wooden spoon or spatula.
Form into 1” balls. Place on a lightly greased cookie sheets. Flatten completely with a fork in a criss-cross pattern. Bake at 325 degrees F for 18 to 20 minutes, until golden brown.
Yield: about 6 doz. Freezes well.
Delicious sounding and I will opt for milk with these!
